- 9 lasagna noodles (regular or no-boil)
- 4 cups fresh spinach
- 15 oz ricotta cheese (whole-milk preferred)
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 3 cloves garlic (minced)
- 1 onion (chopped)
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 2 tbsp olive oil
- 2 cups marinara sauce
Instructions
- Preheat your oven to 375°F (190°C). For regular noodles, cook them according to package instructions until al dente; drain.
- Heat olive oil in a skillet over medium heat. Sauté chopped onions and garlic until fragrant and golden brown (3–5 minutes).
- Add fresh spinach, seasoning with salt and pepper, and sauté until wilted (2–3 minutes).
- In a bowl, mix ricotta cheese, eggs, oregano, basil, salt, and pepper until smooth.
- In a baking dish, spread a thin layer of marinara sauce at the bottom. Layer noodles, half of the ricotta mixture, and half of the spinach mixture. Repeat layers until you reach the top.
- Finish with a generous layer of mozzarella and Parmesan cheese on top. Bake uncovered for about 35–40 minutes until bubbly and golden brown.
- Allow to rest for 10 minutes before slicing to maintain shape.
