  • 9 lasagna noodles (regular or no-boil)
  • 4 cups fresh spinach
  • 15 oz ricotta cheese (whole-milk preferred)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 3 cloves garlic (minced)
  • 1 onion (chopped)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 cups marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C). For regular noodles, cook them according to package instructions until al dente; drain.
  2. Heat olive oil in a skillet over medium heat. Sauté chopped onions and garlic until fragrant and golden brown (3–5 minutes).
  3. Add fresh spinach, seasoning with salt and pepper, and sauté until wilted (2–3 minutes).
  4. In a bowl, mix ricotta cheese, eggs, oregano, basil, salt, and pepper until smooth.
  5. In a baking dish, spread a thin layer of marinara sauce at the bottom. Layer noodles, half of the ricotta mixture, and half of the spinach mixture. Repeat layers until you reach the top.
  6. Finish with a generous layer of mozzarella and Parmesan cheese on top. Bake uncovered for about 35–40 minutes until bubbly and golden brown.
  7. Allow to rest for 10 minutes before slicing to maintain shape.
