Ingredients

  • 2 lbs beef chuck roast, sliced against the grain
  • 4 cups fresh broccoli florets
  • 1/2 cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 1/4 cup brown sugar (dark preferred)
  • 1 tsp sesame oil
  • 2 tbsp cornstarch
  • 1 cup water or beef broth

Instructions

  1. Prepare your ingredients by slicing the beef and chopping the broccoli into bite-sized pieces.
  2. In a bowl, whisk together soy sauce, minced garlic, brown sugar, sesame oil, and water/broth until smooth.
  3. Place the beef in the slow cooker and pour the sauce over it. Add broccoli on top without stirring.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, mix cornstarch with cold water to create a slurry and stir it into the slow cooker to thicken the sauce.
  6. Serve hot over rice or noodles.
