  • 1 lb boneless corned beef brisket
  • 4 cups green cabbage, chopped
  • 2 large carrots, sliced
  • 2 medium Yukon Gold potatoes, diced
  • 1 large sweet onion, chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 tsp dried thyme
  • 5 whole black peppercorns
  • 2 bay leaves

Instructions

  1. Chop the vegetables into bite-sized pieces. Slice cabbage into wedges and carrots into thick rounds.
  2. Place the corned beef brisket at the bottom of the slow cooker. Layer the potatoes, carrots, onions, and cabbage on top.
  3. Pour in enough beef broth to cover most ingredients. Add thyme, peppercorns, and bay leaves.
  4. Cover and cook on low for 8-10 hours or high for 4-6 hours until the brisket is fork-tender.
  5. Remove the brisket, slice against the grain, return it to the soup, serve hot, and garnish with fresh parsley if desired.
