Ingredients

  • 1.5 lbs corned beef brisket
  • 1 medium head green cabbage, cut into wedges
  • 3 medium carrots, peeled and diced
  • 1 large onion, diced
  • 2 medium Yukon Gold potatoes, cubed
  • 4 cups low-sodium beef broth
  • Spice packet included with corned beef
  • 3 cloves garlic, minced

Instructions

  1. Chop cabbage into wedges, dice onions, and peel and chop carrots and potatoes.
  2. Place corned beef brisket at the bottom and surround it with vegetables.
  3. Pour broth over ingredients to cover halfway; sprinkle on spice packet.
  4. Cover slow cooker; cook on low for 8-10 hours until meat is tender.
  5. Remove brisket, shred it with forks, return to soup before serving.
