  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • 1 cup buttermilk
  • 3 cups dill pickles (sliced into 1/4-inch rounds)
  • Vegetable oil (for frying)

Instructions

  1. Prepare your workstation by gathering all ingredients and tools.
  2. Slice pickles into 1/4-inch rounds and drain well.
  3. In one bowl, mix flour, cornmeal, cornstarch, baking powder, cayenne pepper, paprika, salt, and black pepper.
  4. In another bowl, whisk together eggs and buttermilk until smooth.
  5. Dip each pickle slice first in the dry mixture, then in the egg mixture, and back into the dry mix for double coating.
  6. Heat vegetable oil in a deep skillet over medium-high heat until it reaches about 350°F.
  7. Fry coated pickles in batches for about 3-4 minutes or until golden brown.
  8. Remove with a slotted spoon and drain on paper towels before serving.
