  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh corn (off the cob or frozen)
  • 1 cup jasmine rice
  • 1 medium red onion (finely chopped)
  • 2 tbsp lime juice (freshly squeezed)
  • 1/4 cup cilantro (chopped)
  • 1/2 cup feta cheese (crumbled)
  • 2 tsp chili powder
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Gather ingredients: Dice onions and chop cilantro.
  2. Cook chicken: Heat olive oil in a skillet over medium-high heat. Season chicken with salt, pepper, and chili powder. Cook for about 6-7 minutes per side until golden brown.
  3. Sauté vegetables: Remove chicken; in the same skillet, add olive oil, red onion, and corn. Cook until onions are translucent and corn is slightly charred (about 5-6 minutes).
  4. Cook rice: Prepare jasmine rice according to package instructions.
  5. Combine: Slice cooked chicken and return it to the skillet with veggies. Add lime juice and half of the cilantro; stir well.
  6. Serve: Scoop rice into bowls and top with the chicken mixture. Garnish with feta cheese and remaining cilantro.
