  • 3 cloves fresh garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 cups fresh spinach or kale
  • 1 can (14.5 oz) diced tomatoes in juice
  • 6 cups low-sodium chicken broth
  • 2 tsp Italian seasoning blend
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté minced garlic, diced onions, carrots, and celery until fragrant.
  2. Add chicken breasts and diced tomatoes; pour in chicken broth until the ingredients are submerged. Bring to a gentle boil.
  3. Stir in Italian seasoning, salt, and pepper. Reduce heat and simmer for 20–25 minutes until the chicken is cooked through.
