- 1/4 cup brown sugar, packed
- 2 large eggs
- 1 tsp vanilla extract
- Gel food coloring (as desired)
- 1 cup marshmallow fluff
- 1/2 cup powdered sugar (adjust to taste)
- 2 tbsp milk
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt until combined.
- In another bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time followed by vanilla extract; mix until smooth.
- Gradually add the dry ingredients to the wet mixture and mix until just combined. If using, add gel food coloring and mix until the desired color is achieved.
- Using a cookie scoop or spoon, drop dollops of dough onto prepared sheets about 2 inches apart. Bake for 10–12 minutes until edges are firm but centers remain soft.
- Allow cookies to cool completely on wire racks before filling.
- In a mixing bowl, beat together marshmallow fluff, powdered sugar, and milk until creamy.
- Spread filling on one cookie half and sandwich with another half. Repeat with remaining cookies.
