  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • Gel food coloring (as desired)
  • 1 cup marshmallow fluff
  • 1/2 cup powdered sugar (adjust to taste)
  • 2 tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt until combined.
  3. In another bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time followed by vanilla extract; mix until smooth.
  4. Gradually add the dry ingredients to the wet mixture and mix until just combined. If using, add gel food coloring and mix until the desired color is achieved.
  5. Using a cookie scoop or spoon, drop dollops of dough onto prepared sheets about 2 inches apart. Bake for 10–12 minutes until edges are firm but centers remain soft.
  6. Allow cookies to cool completely on wire racks before filling.
  7. In a mixing bowl, beat together marshmallow fluff, powdered sugar, and milk until creamy.
  8. Spread filling on one cookie half and sandwich with another half. Repeat with remaining cookies.
