- 3 lbs Beef Chuck Roast
- 5 Dried Guajillo Chiles (stems and seeds removed)
- 1 large Onion (chopped)
- 6 Garlic cloves (minced)
- 2 tsp Cumin (toasted)
- 1 tsp Oregano (Mexican preferred)
- Juice of 2 Limes
- 4 cups Water
- 12 Soft Corn Tortillas
- Fresh Cilantro and Onion (for garnish)
Instructions
- Prepare the chiles by soaking them in hot water for about 15 minutes until softened.
- In a blender, combine the soaked chiles, onion, garlic, cumin, oregano, and salt. Blend until smooth.
- In a skillet over medium-high heat, sear each side of the beef chuck roast for about 4-5 minutes until browned.
- Place the seared beef into your Crock Pot and pour the blended sauce over it. Add lime juice and enough water to cover most of the meat.
- Cook on low for 8 hours or high for 4 hours until tender enough to shred with forks.
- Shred the beef in the pot and serve on warm tortillas topped with chopped onions and fresh cilantro.
