Instructions
- Preheat oven to 425°F (220°C).
- Rinse and pat dry baby potatoes; cut them in half.
- In a bowl, toss halved potatoes with olive oil, garlic powder, rosemary, salt, and pepper until well-coated.
- Spread potatoes evenly on a parchment-lined baking sheet.
- Roast for 25-30 minutes, flipping halfway through until golden brown and crispy.
- If using Parmesan, sprinkle over potatoes during the last 5 minutes of roasting.
