Description

Ingredients

  • 1 lb baby potatoes
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tbsp fresh rosemary, chopped
  • Salt and pepper to taste
  • Optional: ¼ cup Parmesan cheese, grated

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Rinse and pat dry baby potatoes; cut them in half.
  3. In a bowl, toss halved potatoes with olive oil, garlic powder, rosemary, salt, and pepper until well-coated.
  4. Spread potatoes evenly on a parchment-lined baking sheet.
  5. Roast for 25-30 minutes, flipping halfway through until golden brown and crispy.
  6. If using Parmesan, sprinkle over potatoes during the last 5 minutes of roasting.
