  • 1 lb Brussels sprouts, trimmed and halved
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup mayonnaise (or Greek yogurt)
  • 2 tbsp fresh lime juice
  • 1 tsp chili powder
  • 1/4 cup cotija cheese, crumbled
  • 2 tbsp fresh cilantro, chopped (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Rinse and halve Brussels sprouts.
  2. In a large bowl, toss Brussels sprouts with olive oil, salt, and pepper.
  3. Spread them on a baking sheet and roast for 20-25 minutes until golden brown.
  4. While roasting, heat olive oil in a skillet over medium heat. Sauté corn kernels for about 5-7 minutes until caramelized.
  5. In a small bowl, mix mayonnaise, lime juice, chili powder, salt, and pepper to create the dressing.
  6. Combine roasted Brussels sprouts with sautéed corn in a large bowl. Drizzle with dressing and toss to coat evenly.
