  • 4 bone-in chicken thighs (about 1.5 lbs)
  • 1 medium sweet onion, chopped
  • 4 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp paprika
  • 2 bay leaves
  • Salt and pepper to taste
  • Pimento-stuffed olives (optional)

Instructions

  1. Prepare ingredients by chopping onions, bell peppers, and mincing garlic.
  2. Rinse chicken thighs under cold water and pat dry.
  3. In a large pot over medium heat, add olive oil and sauté the onions and bell peppers until softened.
  4. Add minced garlic and cook until fragrant.
  5. Place chicken thighs skin-side down in the pot; season with cumin, oregano, paprika, salt, and pepper. Sear both sides for about 5 minutes each.
  6. Pour in diced tomatoes with juice and add chicken broth; stir gently to combine.
  7. Add bay leaves, cover the pot, and simmer on low heat for 30-40 minutes or until chicken is fork-tender.
  8. Optional: Add olives during the last 10 minutes of cooking.
