- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 2 cups low-sodium chicken broth
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp paprika
- 2 bay leaves
- Salt and pepper to taste
- Pimento-stuffed olives (optional)
Instructions
- Prepare ingredients by chopping onions, bell peppers, and mincing garlic.
- Rinse chicken thighs under cold water and pat dry.
- In a large pot over medium heat, add olive oil and sauté the onions and bell peppers until softened.
- Add minced garlic and cook until fragrant.
- Place chicken thighs skin-side down in the pot; season with cumin, oregano, paprika, salt, and pepper. Sear both sides for about 5 minutes each.
- Pour in diced tomatoes with juice and add chicken broth; stir gently to combine.
- Add bay leaves, cover the pot, and simmer on low heat for 30-40 minutes or until chicken is fork-tender.
- Optional: Add olives during the last 10 minutes of cooking.
