  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 medium onion, chopped
  • 1 ½ cups shredded sharp cheddar cheese
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • For Toppings: 2 green onions, chopped
  • ½ cup sour cream

Instructions

  1. Grease the slow cooker with non-stick spray.
  2. In a skillet over medium heat, sauté chopped onions until translucent (about 5 minutes).
  3. Add ground beef to the skillet; cook until browned and crumbly. Drain excess fat.
  4. Transfer the beef mixture to the slow cooker; stir in beans, diced tomatoes, chili powder, cumin, salt, and pepper.
  5. Layer half of the shredded cheese over the mixture.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Serve topped with green onions and sour cream.
