  • 4 oz high-quality corned beef, thinly sliced
  • 1 slice Swiss cheese (or provolone)
  • 1 tbsp yellow mustard (or spicy brown mustard)
  • 2 dill pickles, sliced
  • 1 tbsp unsalted butter

Instructions

  1. Prepare your ingredients by slicing the rye bread if necessary.
  2. Spread mustard on one slice of rye bread. Layer corned beef, Swiss cheese, and pickles.
  3. Butter the outside of both slices of bread.
  4. Heat a skillet over medium heat and grill the sandwich until golden brown on one side (about 3-4 minutes).
  5. Flip and press down gently, grilling for another 3-4 minutes until both sides are crispy and cheese is melted.
  6. Cut in half diagonally and serve hot with extra pickles or chips.
