Instructions
- In a large pot over medium heat, cook chopped bacon until crispy (5-7 minutes). Remove with a slotted spoon and set aside.
- In the same pot, sauté chopped onion until translucent (3-4 minutes). Add minced garlic and cook until fragrant (1 minute).
- Add cubed potatoes and chicken broth; bring to a boil. Reduce heat, cover, and simmer until potatoes are fork-tender (15-20 minutes).
- Use an immersion blender to puree half of the mixture until smooth while keeping some chunks for texture.
- Stir in heavy cream and shredded cheddar cheese until melted. Season with salt and pepper.
