Description

Sweet Potato Black Bean Burgers are a delightful, nutritious alternative to traditional burgers.   • 2 medium sweet potatoes (about 2 cups mashed)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup old-fashioned oats
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 large egg (or 1 tbsp flaxseed meal mixed with 3 tbsp water)
  • ½ cup whole wheat or gluten-free breadcrumbs
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Peel and dice sweet potatoes into even cubes. Spread on a parchment-lined baking sheet and roast for 25-30 minutes until tender.
  2. In a skillet over medium heat, sauté chopped onion in olive oil until translucent. Add minced garlic and cook for about 1 minute until fragrant.
  3. In a mixing bowl, mash roasted sweet potatoes with black beans using a fork. Stir in sautéed onion and garlic, oats, cumin, chili powder, egg (or flaxseed), salt, pepper, and breadcrumbs until well combined.
  4. Form the mixture into patties about 3 inches wide and place on a parchment-lined plate.
  5. Heat olive oil in a non-stick skillet over medium heat. Cook each patty for about 4-5 minutes per side until golden brown and crispy.
  6. Serve on toasted burger buns with your favorite toppings.
