  • 4 large Russet potatoes
  • 4 tbsp unsalted butter
  • 1 cup full-fat sour cream
  • 1 ½ cups shredded cheddar cheese (divided)
  • ½ cup bacon bits
  • 2 tbsp chopped chives or green onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the potatoes clean, poke holes with a fork, and bake directly on the oven rack for 45-60 minutes until tender.
  3. Let cool for 10 minutes. Cut in half lengthwise and scoop out most of the insides into a bowl, leaving some flesh intact.
  4. Mix scooped potato with butter, sour cream, 1 cup of cheese, bacon bits, salt, and pepper until creamy.
  5. Spoon the mixture back into potato skins, top with remaining cheese and chives.
  6. Bake for another 15-20 minutes until heated through and golden brown.
