  • 1 lb ground beef (80/20)
  • 1/2 cup plain breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 1 large egg
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, parsley, egg, onion, garlic, Italian seasoning, salt, and pepper. Mix until just combined.
  2. Shape the mixture into golf ball-sized meatballs and place them on a parchment-lined baking sheet.
  3. Heat olive oil in a large pot over medium heat. Sear the meatballs until browned on all sides (about 3-4 minutes per side).
  4. In the same pot, sauté diced carrots and celery for about 5 minutes until softened.
  5. Add vegetable broth and diced tomatoes with their juices; bring to a simmer while scraping up brown bits from the bottom of the pot.
  6. Gently place seared meatballs back into the pot and simmer on low for 25–30 minutes until fully cooked.
