  • 1 avocado, cubed

Instructions

  1. Preheat grill or skillet over medium-high heat. Drizzle olive oil on chicken breasts and season with cumin and chili powder.
  2. Grill or sear chicken for about 6-7 minutes per side until cooked through (internal temperature of 165°F). Let rest for 5 minutes before slicing.
  3. In a large bowl, combine chopped bell peppers, red onion, cilantro, corn, and black beans.
  4. In a small bowl, whisk lime juice with olive oil to create the dressing; pour over the veggie mixture.
