  • 2 cups elbow macaroni
  • 1 lb lean ground beef or turkey
  • 1 can (15 oz) chili beans in sauce
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups shredded sharp cheddar cheese
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 2 cups beef broth

Instructions

  1. Sauté the diced onion in a skillet over medium heat until translucent. Add minced garlic and cook until fragrant.
  2. Brown the ground meat in the skillet until fully cooked; drain excess fat.
  3. Combine the sautéed mixture with chili beans, diced tomatoes, broth, and spices in the crock pot.
  4. Cook on low for 4-6 hours or high for 2-3 hours.
  5. Stir in cooked macaroni and half of the cheddar cheese about 30 minutes before serving. Add remaining cheese until melted.
