Instructions
- Preheat air fryer to 400°F (200°C).
- Pat the cod fillets dry with paper towels.
- In one bowl, whisk eggs until frothy; in another bowl, mix panko breadcrumbs, Parmesan, garlic powder, lemon zest, salt, and pepper.
- Dip each cod fillet into the egg wash, then press into the panko mixture until fully coated.
- Lightly spray the air fryer basket with cooking spray; arrange coated fillets in a single layer and lightly spray the tops with oil.
- Cook for 10-12 minutes or until golden brown and cooked through.
- Serve hot with lemon wedges.
