Description

Air Fryer Panko Cod is a delightful dish that combines tender cod fillets with a crispy panko coating, creating an irresistible flavor and texture. This healthier alternative to deep-fried fish is quick to prepare and perfect for busy weeknights or entertaining guests.


Ingredients

  • 1 lb boneless, skinless cod fillets
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • Zest of 1 lemon
  • Salt and pepper to taste
  • Cooking spray or 1 tbsp olive oil

Instructions

  1. Preheat air fryer to 400°F (200°C).
  2. Pat the cod fillets dry with paper towels.
  3. In one bowl, whisk eggs until frothy; in another bowl, mix panko breadcrumbs, Parmesan, garlic powder, lemon zest, salt, and pepper.
  4. Dip each cod fillet into the egg wash, then press into the panko mixture until fully coated.
  5. Lightly spray the air fryer basket with cooking spray; arrange coated fillets in a single layer and lightly spray the tops with oil.
  6. Cook for 10-12 minutes or until golden brown and cooked through.
  7. Serve hot with lemon wedges.
