- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ½ cup granulated sugar
- 3 large fresh Granny Smith apples, peeled and sliced thinly
- 2 tsp ground cinnamon
- 16 oz cream cheese, softened to room temperature
- 1 cup sour cream
- 1 tsp pure vanilla extract
- 3 large eggs, at room temperature
- ½ cup brown sugar (for topping)
- ¼ cup all-purpose flour (for topping)
- ¾ cup rolled oats (optional)
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar. Press into the bottom of a springform pan.
- Bake crust for about 10 minutes until lightly golden.
- Beat cream cheese in another bowl until smooth. Mix in sour cream, granulated sugar, vanilla extract, and eggs one at a time.
- Fold in sliced apples mixed with cinnamon and pour over the baked crust.
- Combine brown sugar, flour, oats (if using), cinnamon, and cold butter in another bowl until crumbly. Sprinkle over the cheesecake filling.
- Bake for 50–60 minutes until edges are set but center jiggles slightly. Cool completely before refrigerating for at least four hours.
