  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups enchilada sauce (store-bought or homemade)
  • 8 corn or flour tortillas, cut into strips
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 1 can (15 oz) black beans, rinsed and drained (optional)
  • Sour cream for serving

Instructions

  1. Preheat oven to 350°F (175°C). In a large skillet over medium heat, brown the ground beef with chopped onion until fully cooked, about 5-7 minutes.
  2. Stir in minced garlic and your choice of spices (cumin, chili powder, salt). Cook until fragrant for about 1-2 minutes.
  3. In a baking dish, spread a thin layer of enchilada sauce at the bottom. Layer half of the tortilla strips over it followed by half the beef mixture and half the cheese.
  4. Repeat layering with remaining tortilla strips, enchilada sauce, beef mixture, and finish with cheese. Cover tightly with foil.
  5. Bake for 25 minutes covered. Remove foil and bake for another 10 minutes until bubbly and golden brown on top.
  6. Let cool slightly before serving. Top each portion with sour cream or avocado slices.
