  • 4 ears fresh corn on the cob
  • 1/2 cup full-fat mayonnaise
  • 2 tsp chili powder
  • 2 tbsp freshly squeezed lime juice
  • 1/3 cup crumbled Cotija cheese (or feta)
  • 2 tbsp chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Husk the corn and rinse under cold water.
  2. Preheat grill to medium-high heat. Grill corn for 10-15 minutes, turning until slightly charred.
  3. In a bowl, mix mayonnaise, chili powder, lime juice, salt, and pepper until well combined.
