- 2 lbs sweet potatoes, sliced thin (about 1/8 inch)
- 1 cup heavy cream
- 3 tbsp unsalted butter, for greasing
- 2 cloves garlic, minced
- 1 cup sharp cheddar cheese, shredded
- 1 cup Gruyere cheese, shredded
- 1/4 tsp nutmeg
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a large baking dish with unsalted butter.
- Slice sweet potatoes into thin rounds using a sharp knife or mandoline.
- In a bowl, whisk together heavy cream, minced garlic, nutmeg, salt, and pepper.
- Layer half the sweet potato slices in the greased dish and pour half of the cream mixture over them. Repeat with another layer of potatoes and cream.
- Sprinkle shredded cheese on top, cover with foil, and bake for 40 minutes. Remove foil and bake an additional 20 minutes until bubbly and golden brown.
- Let cool for 10 minutes before serving.
