  • 1 can (7 oz) roasted green chiles
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese, softened
  • 1 packet taco seasoning (about 1 oz)
  • 1 cup shredded cheddar cheese (or Monterey Jack)

Instructions

  1. Chop the onion and mince the garlic. Set aside the roasted green chiles.
  2. In your slow cooker, layer the chicken breasts at the bottom. Top with the chopped onions and garlic; sprinkle taco seasoning evenly.
  3. Pour in the chicken broth until ingredients are submerged. Add in the roasted green chiles.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, mix in softened cream cheese until melted and creamy.
  6. Just before serving, top with shredded cheese and let it melt.
