  • 4 large bell peppers (red, yellow, or green)
  • 1 lb lean ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 can (14.5 oz) diced tomatoes (low-sodium)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh herbs (parsley or basil) for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse and slice the tops off the bell peppers; remove seeds and membranes.
  3. In a skillet over medium heat, sauté chopped onions in olive oil until translucent. Add minced garlic and cook until golden.
  4. Add ground turkey to the skillet and cook until browned, breaking it apart as it cooks.
  5. Stir in cooked rice, diced tomatoes, cumin, paprika, salt, and pepper; mix well.
  6. Stuff each bell pepper with the turkey mixture generously.
  7. Place stuffed peppers upright in a baking dish; top with shredded cheese and cover with foil.
  8. Bake for 25 minutes; uncover and bake an additional 10 minutes until cheese is bubbly.
