  • 2 medium zucchinis (spiralized or julienned)
  • 4 oz thinly sliced prosciutto
  • 4 oz fresh burrata cheese
  • 8 oz spaghetti or fettuccine
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 2 tbsp extra virgin olive oil
  • Freshly cracked black pepper (to taste)
  • Salt (to taste)

Instructions

  1. Prepare zucchini noodles using a spiralizer or vegetable peeler; set aside.
  2. In a skillet over medium heat, add olive oil and prosciutto; cook until crispy (about 3-4 minutes). Remove and drain on paper towels.
  3. In the same skillet, sauté minced garlic for 1 minute, then add zucchini noodles; cook until slightly softened (3-5 minutes).
  4. In a bowl, whisk together eggs, Parmesan cheese, and black pepper to create the sauce.
  5. Add cooked pasta to the skillet with zucchini and crispy prosciutto; remove from heat and quickly pour the egg mixture over everything to thicken without scrambling.
  6. Serve topped with torn burrata cheese and garnish with extra Parmesan and black pepper.
