  • 1 whole turkey (1214 lbs)
  • 1/2 cup kosher salt
  • 1 tbsp freshly ground black pepper
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh rosemary, chopped
  • 1 large piece of cheesecloth
  • 1/2 cup softened butter

Instructions

  1. Thaw the turkey completely if frozen. Remove giblets and pat dry with paper towels.
  2. In a bowl, mix kosher salt, black pepper, thyme, and rosemary.
  3. Rub the dry brine mixture all over the turkey, including under the skin.
  4. Wrap the seasoned turkey tightly in cheesecloth to retain moisture.
  5. Refrigerate for at least 12 hours to let flavors meld.
  6. Preheat the oven to 325°F (163°C). Remove cheesecloth and brush turkey with softened butter.
  7. Place on a roasting rack and roast until internal temperature reaches 165°F (75°C), about 2-3 hours.
