Ingredients

Chicken Marinade

  • 1 lb boneless, skinless chicken breasts cut into 1-inch cubes
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp lemon juice freshly squeezed

Vegetables (optional)

  • 1 bell pepper cut into chunks any color
  • 1 small red onion cut into chunks
  • 1 zucchini cut into slices

Instructions

Marinate the Chicken

  • In a mixing bowl, combine olive oil, soy sauce, honey, minced garlic, paprika, salt, black pepper, and lemon juice. Mix well.
  • Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Prepare the Skewers

  • If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  • Thread the marinated chicken and optional vegetables onto the skewers, alternating between chicken and vegetables.

Grill the Skewers

  • Preheat the grill to medium-high heat. Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  • Ensure the internal temperature of the chicken reaches 165°F (75°C).

Serve

  • Remove the skewers from the grill and let them rest for a few minutes before serving.
  • Serve warm with your favorite dipping sauce or a side salad.

Notes

Feel free to customize the vegetables based on your preference. These skewers can also be baked in the oven at 400°F (200°C) for 20-25 minutes if a grill is not available.
