Ingredients

Beans

  • 2 cups canned pinto beans drained and rinsed
  • 1 cup canned kidney beans drained and rinsed
  • 1 cup canned black beans drained and rinsed

Meat

  • 1 pound ground beef or ground turkey

Vegetables

  • 1 medium onion chopped
  • 1 clove garlic minced
  • 1 medium bell pepper chopped

Spices and Seasonings

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Liquid

  • 1 cup beef broth
  • 1 cup barbecue sauce

Instructions

Cook the Meat

  • In a large pot over medium heat, add the ground beef and cook until browned, breaking it apart with a wooden spoon.

Add Vegetables

  • Add the chopped onion, bell pepper, and minced garlic to the pot. Sauté until the vegetables are softened, about 5 minutes.

Combine Ingredients

  • Stir in the pinto beans, kidney beans, black beans, chili powder, cumin, smoked paprika, salt, and pepper.
  • Pour in the beef broth and barbecue sauce, stirring to combine.

Simmer

  • Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 45 minutes, stirring occasionally.

Serve

  • Taste and adjust seasonings if necessary. Serve hot, garnished with fresh herbs if desired.

Notes

Cowboy beans can be served with cornbread or over rice for a complete meal.
