Ingredients

Potatoes

  • 1 kg Yukon Gold potatoes peeled and diced

Vinaigrette

  • 3 tablespoons white wine vinegar
  • 6 tablespoons extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Herbs and Vegetables

  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons fresh chives chopped
  • 1 small red onion finely chopped

Instructions

Cooking Potatoes

  • Place the diced potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil.
  • Reduce heat and simmer for about 15-20 minutes, or until the potatoes are tender. Drain and let cool.

Making Vinaigrette

  • In a mixing bowl, whisk together the white wine vinegar, olive oil, Dijon mustard, minced garlic, salt, and black pepper until well combined.

Combining Ingredients

  • Once the potatoes are cool, add them to the bowl with the vinaigrette. Toss gently to coat the potatoes.
  • Add the chopped parsley, chives, and red onion. Mix until evenly distributed.

Serving

  • Serve the potato salad at room temperature or chilled. Enjoy!

Notes

This salad can be made a day in advance and stored in the refrigerator. The flavors will develop over time.
