Ingredients

Chicken and Marinade

  • 4 pieces chicken thighs bone-in, skin-on
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 tablespoon adobo seasoning
  • 2 tablespoons lime juice freshly squeezed

Vegetables and Broth

  • 2 tablespoons olive oil for cooking
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 medium bell pepper chopped
  • 2 medium tomatoes chopped
  • 1 cup chicken broth low sodium
  • 1 cup water
  • 1 teaspoon oregano dried
  • 1 teaspoon bay leaf

Garnish

  • 1 tablespoon fresh cilantro chopped
  • 1 lime lime wedges for serving

Instructions

Marinate the Chicken

  • In a bowl, combine chicken thighs with salt, black pepper, adobo seasoning, and lime juice. Mix well and let marinate for at least 30 minutes.

Cook the Chicken

  • In a large pot, heat olive oil over medium heat. Add the marinated chicken and brown on all sides, about 5-7 minutes.

Add Vegetables

  • Add chopped onion, garlic, and bell pepper to the pot. Sauté until the vegetables are softened, about 5 minutes.

Simmer

  • Stir in chopped tomatoes, chicken broth, water, oregano, and bay leaf. Bring to a boil, then reduce heat to low and cover. Simmer for 30 minutes or until chicken is cooked through.

Serve

  • Remove bay leaf. Serve the pollo guisado hot, garnished with fresh cilantro and lime wedges.

Notes

Serve with rice and beans for a complete meal.
