Ingredients

Seafood and Vegetables

  • 1 pound large shrimp peeled and deveined
  • 1 pound baby potatoes halved
  • 2 ears corn cut into thirds
  • 1 pound smoked sausage sliced

Seasoning

  • 3 tablespoons Old Bay seasoning
  • 4 tablespoons olive oil divided
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 lemon juiced for garnish

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large mixing bowl, combine the shrimp, potatoes, corn, and sausage.
  • Drizzle with 2 tablespoons of olive oil, Old Bay seasoning, salt, and pepper. Toss to coat evenly.

Cooking

  • Spread the mixture evenly on a sheet pan.
  • Drizzle with remaining olive oil.
  • Bake in the preheated oven for 20-25 minutes, or until the shrimp are pink and the potatoes are tender.
  • Remove from the oven and squeeze fresh lemon juice over the top before serving.

Notes

Serve with extra lemon wedges and enjoy with a side of crusty bread.
