Ingredients

Shrimp

  • 1 pound large shrimp, peeled and deveined about 20-25 shrimp

Marinade

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano

Vegetables (optional)

  • 1 bell pepper, cut into chunks red or green
  • 1 medium onion, cut into chunks

Instructions

Prepare the Marinade

  • In a mixing bowl, combine olive oil, lemon juice, minced garlic, paprika, salt, black pepper, and oregano. Mix well.

Marinate the Shrimp

  • Add the shrimp to the marinade and toss to coat. Cover and refrigerate for at least 15 minutes.

Prepare the Skewers

  • If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated shrimp onto the skewers, alternating with bell pepper and onion chunks if desired.

Grill the Skewers

  • Preheat the grill to medium-high heat. Grill the skewers for about 2-3 minutes on each side, or until the shrimp are opaque and cooked through.

Serve

  • Remove from the grill and serve immediately with lemon wedges and your favorite dipping sauce.

Notes

Feel free to customize the vegetables on the skewers or add your favorite spices to the marinade for extra flavor.
