Ingredients

Sausage Ingredients

  • 1 lb ground chicken preferably lean
  • 1 cup finely chopped apples Granny Smith or Honeycrisp
  • 1 tsp salt
  • 1 tsp black pepper freshly ground
  • 1 tsp sage dried
  • 1 tsp thyme dried
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp maple syrup optional for sweetness

Instructions

Prepare the Sausage Mixture

  • In a large mixing bowl, combine the ground chicken, chopped apples, salt, black pepper, sage, thyme, garlic powder, onion powder, and maple syrup. Mix thoroughly until all ingredients are well incorporated.
  • If using sausage casings, rinse them thoroughly and soak in water for 30 minutes. If not, you can form patties instead.

Cook the Sausage

  • Heat a skillet over medium heat. If making patties, form the mixture into 4 equal-sized patties. If using casings, stuff the mixture into the casings and twist into links.
  • Cook the patties or links in the skillet for about 5-7 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F).

Serve

  • Remove from heat and let rest for a few minutes. Serve warm with your favorite breakfast sides or in a sandwich.

Notes

These chicken apple sausages can be frozen for later use. Just make sure to cool them completely before storing in an airtight container.
