Ingredients

Potatoes

  • 2 pounds Yukon Gold potatoes peeled and diced

Dressing

  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Add-ins

  • 6 slices bacon cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup green onions sliced
  • 1/4 cup fresh parsley chopped

Instructions

Prepare the Potatoes

  • Place the diced potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool.

Make the Dressing

  • In a mixing bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and black pepper until smooth.

Combine Ingredients

  • In a large mixing bowl, combine the cooled potatoes, dressing, crumbled bacon, cheddar cheese, green onions, and parsley. Gently fold until well mixed.

Chill and Serve

  • Cover the potato salad and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

This potato salad can be made a day in advance for better flavor. Adjust the ingredients to your preference, adding more bacon or cheese if desired.
