Ingredients

Pie Crust

  • 1 each pre-made pie crust or homemade

Filling

  • 4 cups fresh tomatoes sliced
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 tablespoon fresh basil chopped
  • 1 tablespoon fresh thyme chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 large eggs
  • 1 cup heavy cream

Instructions

Prepare the Pie Crust

  • Preheat the oven to 375°F (190°C). Place the pre-made pie crust in the pie dish and set aside.

Make the Filling

  • In a mixing bowl, combine the sliced tomatoes, mozzarella cheese, cheddar cheese, basil, thyme, salt, and pepper.
  • In another bowl, whisk together the eggs and heavy cream until well combined.
  • Pour the egg mixture over the tomato mixture and stir gently to combine.

Assemble and Bake

  • Pour the filling into the prepared pie crust and spread evenly.
  • Bake in the preheated oven for 40-45 minutes, or until the filling is set and the top is golden brown.
  • Remove from the oven and let cool for 10 minutes before slicing and serving.

Notes

Serve warm or at room temperature. Great with a side salad.
